Roasted curry powder is called Badapu Thuna Paha (literally, raw three-five). The name refers to the three to five spices that a standard curry powder traditionally contains. But toast the spices before grinding them to blend and to help bring out their flavors makes the roasted curry powder special. The three essential spice seeds include cumin seeds, fennel seeds, coriander seeds, additional curry leaves and/or pandanus leaves, and cinnamon bark.
