White pepper has a more intenseÂ flavorÂ than black pepper. Unlike black pepper, white peppercorns keep developing until the berries are red, after which they are rinsed in water until the outer shell dropsÂ off and the inner white pepper pearls emerge.
The skin removal process also removes some of the hot piperine compound, as well as volatile oils and compounds that give black pepper its aroma. As a result, white pepper has a different flavor and heat component than black pepper.
